Three mushroom parm sandwich

Ingredients
4 tablespoons vegetable oil
1 onion, yellow, medium, thinly sliced
1 bell pepper, green, thinly sliced
1 teaspoon garlic powder or garlic, fresh, chopped
1½ teaspoons Montreal steak seasoning
1 jar marinara sauce, 28 ounces
1 cup portobello mushrooms, sliced
1 cup shiitake mushrooms, sliced
1 cup oyster mushrooms, sliced
4 rolls, multigrain, 6-inch sub
16 slices mozzarella cheese, fresh
preparation
Instructions
1. Heat 2 tablespoons vegetable oil in a sauté pan over medium-low heat and add onion, bell pepper, and garlic, cooking until very tender.
2. Add the remaining vegetable oil and increase heat to medium-high, then add seasoning and mushrooms and cook for 4–5 minutes.
3. Heat marinara sauce in a separate pan over medium-high heat for 2–3 minutes.
4. Preheat oven to 400°F.
5. Split rolls open without separating them, spread marinara on both sides, add about ¼ of the vegetable mixture, and top with 4 slices mozzarella.
6. Place sandwiches on a baking sheet and bake about 3 minutes or until cheese melts.
7. Close the sandwich, slice in half, and serve.
