5 pounds firm tofu
5 cups diced red peppers
5 cups diced red onions
10 cups brown rice
10 cups cornstarch
15 tablespoons Montreal seasoning
20 12-inch plain wraps
5 cups vegetable oil
5 cups diced red peppers

Instructions
1. Drain tofu and let dry for 10 minutes. Cut into cubes.
2. Season tofu with Montreal seasoning. Toss cubes in cornstarch and shake off excess.
3. Fry tofu until lightly browned on all sides, turning occasionally.
4. Cook brown rice according to package instructions.
5. In a sauté pan, heat 2 teaspoons oil and sauté onions and peppers until softened.
6. Combine tofu, onions, peppers, and sauce in a bowl.
7. Place wrap on cutting board. Add ½ cup rice and ½ cup tofu mixture. Fold like a burrito.
8. Fry burrito until golden brown on all sides and serve.
