2 medium butternut squash
1 bag baby spinach (8 ounces)
2 cups cooked ancient grain mix (quinoa, barley, or farro)
2 tablespoons roasted garlic
1 cup craisins
2 cups roasted garbanzo beans
1 medium onion, diced
1 medium carrot, diced
2 teaspoons cumin
2 teaspoons cinnamon
2 tablespoons feta cheese
2 leeks, diced
4 tablespoons butter
4 tablespoons extra virgin olive oil
6 tablespoons candied walnuts
salt and pepper
ground thyme
fresh rosemary

2 leeks, diced

4 tablespoons extra virgin olive oil
6 tablespoons candied walnuts

Instructions
1. Slice squash in half and scoop out seeds. Drizzle with olive oil and season with salt, pepper, thyme, and rosemary. Roast at 375°F until slightly tender, about 20 minutes.
2. While squash roasts, sauté carrots, onion, leeks, roasted garlic, and seasoning in butter until softened, about 6 minutes.
3. Remove vegetables from heat and add spinach, cooked grains, and craisins, mixing until incorporated.
4. Fill squash cavities with the sautéed mixture and top with candied walnuts and feta cheese.
5. Return squash to oven and roast an additional 8 minutes until heated through.
