Instructions
1. Place all ingredients except maple syrup into a medium-sized pan and stir well to combine.
2. Heat over medium-high heat and bring to a boil, stirring continuously so it does not burn.
3. Cook about 15 minutes until the mixture is creamy and the rice is cooked; it should have the consistency of oatmeal. Stir in maple syrup to sweeten.
4. Sprinkle cinnamon into the rice pudding and stir to combine.
5. Sprinkle additional cinnamon on top for garnish, if desired.
