6 each heirloom tomatoes
2 tablespoons minced garlic, fresh
1/4 cup fresh basil, chiffonade cut
2 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
1 teaspoon Sambal Oelek chili paste
1/2 cup red onions, finely chopped
1 teaspoon kosher salt
1 tablespoon white balsamic vinegar
1 teaspoon ground black pepper

Instructions
1. Roughly dice the tomatoes and place them in a colander to drain off the excess juice.
2. In a large mixing bowl, combine the salt and pepper. Next, add the olive oil, vinegar, and lemon juice.
3. Add the drained tomatoes, garlic, chili paste, and chopped onions to the bowl.
4. Lightly toss in the fresh basil leaves and mix gently.
